Ingredients
- 2 lbs boneless, skinless chicken breasts, diced
- 14 oz smoked sausage, sliced
- 3-6 tablespoons That's Real Good™ Cajun Blackened Seasoning
- 1 tablespoon olive oil
- 6 cups cooked rice
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 2 celery stalks, diced
- 2 cups chicken broth
- 1 cup shredded cheddar cheese (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add chicken and Cajun Blackened Seasoning. Cook until the chicken reaches an internal temperature of 165°F.
- Add sliced sausage and cook for 5-7 minutes until lightly browned.
- Stir in bell peppers and celery. Cook for 4–5 minutes until vegetables begin to soften.
- Add chicken broth and bring to a simmer.
- Stir in cooked rice and mix until evenly combined.
- Simmer for 5–10 minutes, stirring occasionally, until most of the liquid has been absorbed.
- Stir in cheese if using.
- Serve warm.
