Ingredients

  • 2 lbs boneless, skinless chicken breasts, diced
  • 14 oz smoked sausage, sliced
  • 3-6 tablespoons That's Real Good™ Cajun Blackened Seasoning
  • 1 tablespoon olive oil
  • 6 cups cooked rice
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 2 celery stalks, diced
  • 2 cups chicken broth
  • 1 cup shredded cheddar cheese (optional)

Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add chicken and Cajun Blackened Seasoning. Cook until the chicken reaches an internal temperature of 165°F.
  3. Add sliced sausage and cook for 5-7 minutes until lightly browned.
  4. Stir in bell peppers and celery. Cook for 4–5 minutes until vegetables begin to soften.
  5. Add chicken broth and bring to a simmer.
  6. Stir in cooked rice and mix until evenly combined.
  7. Simmer for 5–10 minutes, stirring occasionally, until most of the liquid has been absorbed.
  8. Stir in cheese if using.
  9. Serve warm.
