That's Real Good™ Cajun Chicken Bacon Ranch Potato Casserole
Tender Cajun-seasoned chicken, Ranch-seasoned red potatoes, crispy bacon, and melted cheddar cheese come together in this hearty family casserole packed with homemade flavor.
Ingredients
Potatoes
- 10 medium red potatoes, diced
- 2 tablespoon olive or avocado oil
- 2-4 tablespoon That's Real Good™ Ranch Seasoning
Chicken
- 2-3 lbs boneless, skinless chicken breasts, diced
- 2 tablespoon avocado or olive oil
- 3-6 tablespoon That's Real Good™ Cajun Blackened Seasoning
Casserole
- 8 slices bacon, cooked and crumbled
- 2 Tablespoons avocado or olive oil
- 2 cups shredded cheddar cheese, divided
- 2 green onions, sliced (optional)
Instructions
- Preheat oven to 400°F.
- Lightly grease a 9x13-inch baking dish.
Prepare the Potatoes
- In a large bowl, toss diced red potatoes with olive or avocado oil and Ranch Seasoning.
- Spread potatoes evenly into the baking dish.
- Bake for 30–35 minutes, stirring halfway through, until fork tender.
Prepare the Chicken
- While the potatoes bake, toss diced chicken with olive or avocado oil and Cajun Blackened Seasoning.
- Cook in a skillet over medium-high heat until the chicken reaches an internal temperature of 165°F.
Assemble the Casserole
- In a large bowl, combine 2 tablespoons of avocado or olive oil, roasted potatoes and cooked chicken
- Stir until evenly combined.
- Transfer mixture back into the baking dish.
- Top with the remaining 1 cup of cheddar cheese.
Bake
- Bake uncovered for 15–20 minutes, or until the cheese is melted and bubbly.
- Let rest for 5 minutes before serving.
- Garnish with green onions if desired.
